Of 100% variety of arbequina grown on the estate of “9 Salts” between Juneda and Borges Blanques and Castelldans. They are collected in boxes of 12 kg, during the month of November, with a yield of 12-13% and quickly milled in cold extraction.
The nose smells of a ripe fruity with floral notes of rosemary, helm, flowers of the forest and licorice.
In the mouth you can see an intense fruity sweet ripe banana, almond, ripe walnut, licorice and rosemary.
It can be paired with vegetables, vegetables, meats and fish raw and marinated (tartar, sashimi, tataki, carpaccios, etc.), in smoked foods, sweet fruit, white chocolate, milk chocolate, confit and low temperature cooking.
